Carob Chip Muffins – Holden House muffins with an alternative chocolate twist!
According to www.HealthLine.com the most common use for carob is in food. Carob tastes similar to chocolate and is a great alternative. The carob tree, or Ceratonia siliqua, has fruit that looks like a dark brown pea pod, which carries pulp and seeds. Carob is a sweet and healthy substitute for chocolate. Using it for health benefits goes back 4,000 years to ancient Greece. You can still enjoy your favorite sweet treats like fudge, chocolate milkshakes, and brownies and in this case, a delicious muffin recipe for the breakfast table!
Ingredients: 1 egg, slightly beaten
1/3 cup margarine or butter (softened)
1/2 cup milk
1/2 cup sour cream
2 1/2 cups flour
1 Tablespoon Baking Powder
1/3 cup sugar
1/3 cup brown sugar
1/2 tsp. each cinnamon, nutmeg and ginger
Pinch Salt
1 cup Carob Chips
1/2 cup chopped walnuts for topping
Sugar for sprinkling on top
Directions: Cream together egg, butter, milk and sour cream. In separate bowl combine flour, baking powder and sugars. Add dry mixture to egg mixture. When completely mixed, add carob chips. Evenly divide mixture into 12 muffin well greased muffin tins. Top with chopped walnuts and sprinkle a little sugar over the top of muffins.
Temp. & Time: Bake muffins in a preheated 400 degree oven for 25 30 minutes or until done and lightly brown.
Number of Servings: Makes 12 muffins.
