Tracy’s Apple and Cinnamon Walnut French Toast
1 can apple pie filling (chop apples into small chunks)
1 8 oz container of Cream Cheese (softened)
¼ cup Ricotta cheese (room temperature)
¼ cup chopped Walnuts (fine)
1 loaf French bread sliced ½ in thick
3 eggs
½ cup Heavy Whipping Cream
½ teaspoon Vanilla
1 Teaspoon Cinnamon
Strawberry Jam (for garnish)
Mix eggs, whipping cream, cinnamon and vanilla together. Spread one side of French bread with softened cream cheese and Ricotta. Place small amount of filling on top of cream cheese and Ricotta and place a clean slice of bread over the top. Carefully dip sandwich into the egg mixture and place in a pre-greased 9×13 pan. Pour any leftover mixture over the top of servings and leave in refrigerator overnight. In the morning, preheat the oven to 400 degrees and bake for approximately 30 minutes or until outer bread slice is toasted and slightly brown, turning over once during baking to evenly brown. Top with a little extra warm pie filling, a sprinkle of cinnamon and fresh apple slices. Garnish the plate, add an optional choice of strawberry jam on the side and ENJOY!
