Nana’s Simple Pie Crust
2 c flour
1/2 c salad oil
1/4 c milk
1/4 tsp salt
Sift flour and salt, add salad oil and milk and mix with a fork until well mixed and can be rolled into a ball. Roll flat with a rolling pin between two sheets of wax paper. Transfer to a medium or deep dish pie plate. Crimp edges and cut excess around base.
Easy Pumpkin Pie Mix
2 eggs
1/2 c sugar
1/4 tsp salt
1/8 tsp each ground cloves, nutmeg, ginger and cinnamon
1/2 can (15 oz) Pumpkin puree
1/2 c evaporated milk
Whisk eggs, pumpkin and milk together. Add sugar, salt and spices and mix well. Pour into pie shell. Preheat oven to 450. Reduce heat to 350 and bake for approximately 40-45 minutes or until knife or toothpick inserted in center comes out clean and pie is solid on top. Hint, to prevent crust becoming too brown, line crust with aluminum foil. Cut into wedges and serve with whipped cream topping or side of vanilla ice cream. Enjoy!
